"Brad Gruno is the Founder & CEO of the popular raw food company, Brad's Raw Foods. Back in 2006, Brad was the typical American guy--overweight, high cholesterol, low energy, didn’t sleep well. Sarah Velasco: Can you tell us about yourself? What does your job entail?
Brad Gruno: I'm Brad Gruno -- Founder & CEO of Brad's Raw Foods. Though my main job is to continue to oversee the success of my company, I also enjoy traveling and connecting with people all around the world in order to “spread the kale.” I take great pleasure in sharing my story and inspiring others to adopt healthier habits and lifestyles. 


Sarah Velasco: Can you tell us about Brad's Raw Chips and how it got started?
Brad Gruno: After adopting a 100% raw diet, I was completely happy and invested in my new way of eating, but did miss the familiar crunch of traditional American snack food. I started experimenting with raw chips made from fresh vegetables, sprouted flax seeds, fruit nuts, buckwheat groats and an array of spices. I dehydrated the chips below 115 degrees so that I wouldn’t break my commitment to a raw diet. My snacks were met with a lot of enthusiasm from my family and friends, and because of my entrepreneurial spirit and tendencies, I quickly realized the commercial appeal they could have. I ran demos at local farmers markets, and further enthusiasm validated the notion that my product had real potential. After a lot of work and persistence, local health food stores and regional Whole Foods Markets began carrying Brad’s Raw Chips. Since then, my company has been in a constant state of upward growth and expansion, and my varying product lines are sold in specialty retailers and established grocers all throughout the country.

Sarah Velasco: When did you start going raw? Why did you change your eating habits?
Brad Gruno: I adopted a raw food diet years ago, after my career in the telecommunications industry came to a sudden halt with the dot com crash. When I moved back to my home area of Bucks County, PA, I was at least 40 pounds heavier, depressed because of my recent business failure, and prescribed the drug Lipitor to normalize high cholesterol levels. I then realized that even though I had lost everything I had worked so hard for, I could take back control of my health; how I treated my body was the one thing I actually did have control over. After watching the documentary film Eating, I was inspired to adopt a 100% raw diet for a year, and I literally jumped in head first – which is something that I actually would not recommend! My new book, "Brad's Raw Made Easy", will help readers ease into a 100% raw food cleanse and then transition them to a diet that consists of 80% raw food and 20% cooked, healthy options (the lifestyle that I’m currently living right now).

Sarah Velasco: Did you notice changes with your body? How soon did you notice them?
Brad Gruno: I started to notice a positive change in my body and mood after only a few weeks, but after a few months, I was like a completely different person. I had lost over 40 pounds, lowered my cholesterol levels, and had the kind of energy and enthusiasm that I hadn’t experienced since my mid-20s. I remember my aunt saying to me one day, “Brad, your skin is glowing!” Once I knew my body was capable of feeling that good, there was no way I was going back to my old eating habits and lifestyle.

Sarah Velasco: What are common misconceptions about going raw?
Brad Gruno: I think the most common misconception about a raw food diet is that it has to be incredibly restrictive or complicated, but it doesn't have to be like that at all. There are so many amazing recipes you can make from raw food, and having the goal of living an 80/20 lifestyle for the longterm gives you the perfect amount of flexibility. Depending on your previous eating habits and lifestyle, this diet might be more or less challenging at first – but after a few weeks, the way it positively affects and changes your body is all the motivation you need to keep going. My book breaks it down and walks the reader through it step-by-step to make it as easy and encouraging as possible.

Sarah Velasco: Can you tell us about your book? What was that process like for you? What inspired you to write one?
Brad Gruno: "Brad's Raw Made Easy" is a complete guide to living an 80/20 lifestyle. It takes the reader through a 60 day cleanse -- 30 of those days being 100% raw. After completing the 60 days, the reader is completely ready and prepared to live a healthy lifestyle consisting of 80% raw foods and 20% cooked, healthy options. I wrote it with the hopes of showing mainstream America how easy being healthy can be, and the book includes 150 easy-to-make recipes, a food journal and my own personal journey of turning around my life and health. Putting the book together was such a fun process! I rounded up a some of my amazing friends in the raw food community, so there's also a handful of great contributed recipes in the book. 
I was inspired to write a book when I saw how the majority of people responded to my story. From traveling around the world and connecting with people to spread the word and mission about Brad's Raw Foods, I had so many people approach/write/email/etc. asking how I was able to turn around my health and what my secret was. I was just a regular guy – not someone who had been overly exposed to the health and fitness industry my whole life – and that really seemed to resonate with people. I think it’s encouraging and motivating for people to know that you really can change your life and lifestyle at any age. I wrote this book for all of the regular people like me who think that it’s too hard to make drastic changes to his or her eating habits. I truly believe that if I can do it, anyone can do it, and “Brad's Raw Made Easy” will show him or her the way. I also understand that sometimes books about changing your lifestyle can be difficult and intimidating. I wanted to make this book for mainstream America. I made the recipes so simple anyone with a home blender can make them. 

Sarah Velasco: What advice would you give to one wanting to switch over to a raw diet? 
Brad Gruno: Try adopting the mentality to incorporate MORE into your diet, as opposed to thinking of it as LESS. Eat more vegetables, fruits, nuts, seeds, etc. on a daily basis and the more good stuff you add, the less you’ll even want the bad stuff. I think when you start thinking about it more in terms of addition and not subtraction you’re already setting yourself up for success. There’s none of the guilt or beating yourself up when you do indulge or eat something that you maybe shouldn’t have – just focus on continuing to eat more “good” things.

Sarah Velasco: What does your average day diet look like?
Brad Gruno: I love starting my day with a green smoothie. It is seriously the easiest thing you can make. Throw some leafy greens (kale is a favorite of course), fruit, nuts, and maybe some other veggies into a blender with water, and you’re good to go. I usually make a full pitcher in the morning and that will last me all morning until lunchtime. Another thing I do is keep fruits and veggies washed and stored in ready-to-eat containers so that they’re easy to grab on the go. I’m a big fan of big salads loaded with veggies for lunch and/or dinner with my signature cashew dressing, called “Brad’s House Dressing” in the book. I also always like to keep some small bags of raw nuts and seeds with me – the fatty proteins are great for holding me over until my next meal. Of course I always have a stock of Brad’s Raw Crunchy Kale and Brad's Raw Chips on me for some healthy snacking too.



Sarah Velasco: Can you tell us about your kale chips? How are they made?

What we think:

Sarah Velasco: Can you tell us about yourself? How did you get involved in this business?
Chelsea DiFrancesco: My name is Chelsea and my life basically revolves around food. I’m half joking when I say that, but for the most part it’s true. I’ve always loved to cook, and more importantly, eat. I grew up in Utah, and my older sister was friends with Stephen Richards, the founder of BetterBody Foods. Consequently, I’ve been a Xagave user since the very beginning, nearly 7 years ago. When I moved back to Utah after grad school, I was so excited to have the opportunity to join the BBF team. The best part is that now I get paid to think about food all day!

Sarah Velasco: Can you tell us about Better Body Foods?
Chelsea DiFrancesco: We are a Utah-based company dedicated to revolutionizing the way people cook. Our company brings healthy and tasty alternatives to sugar and fats in everyday baking and cooking. Sarah Velasco: Can you tell us about Xagave? How did it start?
Chelsea DiFrancesco: Xagave was BetterBody Foods’ first product, which launched in 2007. CEO and Founder Stephen Richards has family members who are diabetic, and so agave nectar was quickly on his radar because it’s so diabetic friendly. He became passionate about this amazing product and its many health benefits. He worked with agave growers to get the best product available. Sarah Velasco: What is agave nectar?
Chelsea DiFrancesco: Agave nectar is the raw nectar of the agave plant, a member of the lily family. Because of its fructose/glucose makeup, agave is a naturally low-glycemic food, about 35 on the glycemic index. This means that agave doesn’t cause the sharp spikes and crashes in blood sugar that other sugars do.


Sarah Velasco: How is it made?
Chelsea DiFrancesco: The agave root is dug up from the earth, cut from the rest of the plant and then ground into a pulp. The pulp is then distilled and strained to separate the nectar from the water and other plant materials. BetterBody Foods’ Xagave is a raw product, meaning that it is never heated above 117°F during the extraction process. In fact, we test every batch of agave we get for isomaltose markers that indicate the nectar has caramelized. This rigorous testing process ensures that we reject all incoming product with any indication that the agave has been cooked or adulterated.

Sarah Velasco:  Are there health benefits of Xagave Agave Nectar?
Chelsea DiFrancesco: The most commonly known health benefit of agave nectar is that it’s low on the glycemic index. The glycemic index is a numerical system that measures the increase in blood sugar level when triggered by carbohydrates or sugars. The higher the number, the greater the blood sugar response, including effects such as a burst of energy followed by a dramatic decrease in energy. Therefore, a high GI food will trigger a dramatic spike while a low GI food will cause a small rise. Agave is a low GI food, which means you will notice little to no change in your blood sugar response or energy levels. High GI sweeteners like honey, sugar and high fructose corn syrup provide an immediate burst of energy but quickly “burn out,” causing lethargy and hunger. This process leads to consuming more of the same sugar for that unsustainable burst of energy, causing a cycle of overeating. Xagave contains a different type of sugar that burns slowly and avoids this cycle, leaving you with longer-lasting energy levels if used wisely and in moderation.

In addition to being low-glycemic, Xagave is the only brand of agave nectar on the market that contains both fiber and calcium. One serving contains 2 grams of fiber and 17% of your daily needed calcium. These nutrients occur naturally in the agave plant, but are normally processed out during extraction. Because Xagave is an all-natural, raw product, we are able to retain these essential nutrients.

The fiber in Xagave is called inulin, which is a water-soluble dietary fiber found in more than 3,500 fruits and vegetables. Inulin feeds the good bacteria in your digestive tract, improving the health of your digestive system. It also decreases caloric intake and aids in weight management. Because of the inulin content in Xagave, recipes using Xagave can be altered to use less fat and oil. Additionally, fiber-rich foods are more satisfying and suppressing appetite. Studies have also shown that Inulin, in addition to promoting digestive health, improves calcium and magnesium absorption by as much as 20%, increases bone density by 15% and moderates blood sugar levels.


Sarah Velasco: What is the difference between Xagave Nectar and other ones on the market?
Chelsea DiFrancesco: Besides being the only agave on the market that contains both fiber and calcium, Xagave is also the best tasting agave on the market. Many agave nectars can have a strong molasses flavor that has a bitter aftertaste. Xagave has a clean, neutral flavor that doesn’t change the flavor of your foods. In fact, you wouldn’t be able to taste the difference between foods sweetened with Xagave and regular sugar.

Sarah Velasco: Are there any misconceptions when it comes to agave nectar?
Chelsea DiFrancesco: The most common misconception about agave nectar is that it gives you a free pass to eat as many sweet treats as you want. Like all sugars, agave should be consumed in moderation. However, agave is a much healthier alternative to other natural and artificial sweeteners.

I get a lot of great questions about agave vs. zero calorie sweeteners, particularly from customers who are watching their weight. They usually ask, "But Stevia/Splenda/etc. is zero calorie, doesn't that mean it's better for me?" In short, the answer is no, it doesn't. Unless you are getting the unrefined juice from natural Stevia leaves (very hard to do unless you grow the plants yourself), the Stevia customers are using is chemically processed. We are just beginning to understand the negative effects of the chemicals used in artificial. Sucralose, the main ingredient in many sweeteners, actually leads to increased weight gain! Stevia and other artificial sweeteners are also much more difficult to cook and bake with than agave.

Xagave on the other hand, is 100% natural, never chemically processed and actually improves the texture of the foods you bake due to its fiber content. Because it's sweeter than sugar, you use less of it and save 
calories versus cooking with sugar. Although agave is not calorie-free like artificial sweeteners, consuming chemically produced artificial sweeteners is worse for your overall health than the few calories you consume by eating agave. Real food has calories, and I prefer real food to chemicals any day :)

There is also a lot of misinformation about the high fructose content of agave nectar, comparing it to high fructose corn syrup. The fructose found in Xagave agave nectar is a natural sugar found in all fruits, unlike the highly processed fructose found in HFCS. Fructose is digested differently than glucose, which is why it doesn't affect blood sugar in the same way. Low-glycemic diets have many benefits and have been linked to reduced cases of breast cancer and reduced likelihood of type-2 diabetes. Fructose is processed in the liver, which is the reason that people claim it can be bad for you. However, one serving of our agave (1 tablespoon) contains about 16 grams of fructose. A medium sized apple contains 12.6 grams. As you can see, agave contains only slightly more of this natural sugar than a piece of fruit. As with all sugars, consuming mass quantities of agave can be harmful to your health. However, consumed in moderation, agave is a great option for sweetening foods.



Sarah Velasco:  How long is the shelf life?
Chelsea DiFrancesco: The labeled shelf life on a bottle of Xagave is 2 years. However, I have a 5 gallon container in my food storage that’s lasted me much longer than that without any noticeable changes in the product.

Interview with Lindsay Reinsmith, Founder & CEO of Kaeng Raeng



Lindsay is a writer, certified personal trainer and the founder and CEO of Kaeng Raeng, a vegan, gluten free meal replacement cleanse made in Palo Alto, CA.  Originally a “meat and potatoes” gal from Texas, Lindsay now attributes her healthy lifestyle to ‘Skinny Bitch’ and trail running with her dog in the SF bay area.  When she isn’t writing or helping others get healthy, you can find her volunteering for animal rescue, baking vegan cupcakes or cheering on the Stanford Cardinal football team.

Sarah Velasco: Tell us about Kaeng Raeng? How did it begin?
Lindsay Reinsmith: Prior to starting Kaeng Raeng, I was a meat and potatoes girl from Texas who had a tough time staying healthy.  After I attended Stanford and worked long hours as an investment advisor for food and beverage companies, I decided I needed to make some positive changes for my health.  I read "Skinny Bitch," and was inspired to embrace raw diets and a vegan lifestyle.  Frustrated with the lack of healthy and affordable cleanses on the market, I set out to make my own detox smoothies.  When others asked what I was using, and could they buy it from me, I decided to start making Kaeng Raeng for sale.  The financial crisis in 2009 left me with a unique opportunity to become an entrepreneur!  We launched our first product in 2010 after three rounds of product testing with the public.  Today, we're still a small, privately-owned business; but don't worry, KR's not made in my kitchen anymore!  It's made in a certified GMP facility in California.  I often get asked "why the name Kaeng Raeng?"  Kaeng Raeng means 'be healthy be strong' in the Thai language.  I am fascinated with Thai culture and cuisine, particularly the annual vegetarian festival held in Phuket every year. I wanted a name that embodied what KR was all about: helping others get healthy. Although we have a Thai name, KR is made with 100% California ingredients.  

Sarah Velasco: How is it different from other cleanses or detox programs?
Lindsay Reinsmith: The biggest difference between Kaeng Raeng and other cleanses is that KR is not a juice fast.  Your typical juice cleanse, whether you make it yourself or have it delivered to your door, is largely devoid of fiber and protein, the two key nutrients that give you sustained energy and make you feel full.  Fiber is important because it counteracts sugars found in fruit and vegetable based juices and smoothies.  Without that fiber to slow down absorption, you can have insulin spikes, and you're basically doing a sugar water fast.  Kaeng Raeng provides all of the nutrients and vitamins of juice, without removing the nutritionally complete elements of whole foods.  Plus, you can eat raw food while on KR, so it's not limiting both physically and socially.  And finally, just because you get maximum nutrition doesn't mean inconvenience.  We made KR freeze dried, with no preservatives, so you can take it with you on the go.

Sarah Velasco: Can you tell us about yourself? How you became involved with Kaeng Raeng?
Lindsay Reinsmith: When I started Kaeng Raeng, I spent my days working in investment banking focused on food and beverage companies.  I got some pretty neat insight into what makes these companies fail, and what makes them succeed.  I saw a hole in the cleanse market and decided to do something about it. Today, I'm a Certified Personal Trainer and health advocate.  I'm a vegan and animal lover.  But mostly I'm still just a normal girl who used to have trouble staying healthy and found a kick ass way to always look and feel my best.

Sarah Velasco: What is your philosophy behind detox cleanses?
Lindsay Reinsmith: I believe in the premise of a raw diet: to abstain from traditional, harmful, toxic foods and beverages and give your body a rest by feeding it only pure, all natural plant-based ingredients.  Sometimes we just need to give our bodies a break!  I am always amazed at how mentally cleansed I feel after doing Kaeng Raeng, how aware I am of my food choices and habits, how good I feel after feeding myself the right ingredients.  That's what we're about: helping you return your body to a clean, organic state, so you can look and feel your absolute best.

Sarah Velasco: What does an average day meal plan look like for you ?
Lindsay Reinsmith: I am personally vegan, so I normally start my day with a green smoothie, often using a Kaeng Raeng packet as a meal replacement with raw veggies, frozen fruit, and LOTS of water.  I'm a sucker for green tea and almond milk, and usually have that as a mid-morning snack.  Lunch is typically a salad: any kind of salad, loaded with veggies and protein like beans, nuts, or tofu.  If that's not available, I try to have Mediterranean or Mexican food as those always have lots of veggie options.  I constantly seek out protein in my meals since I don't eat animal products.  In the evenings, I cook a healthy, well balanced meal for my husband, usually a mix of whole grains, protein, and vegetables.  Even though I've got a sweet tooth, I try to limit my sugar intake to whole fruits like oranges, apples, and berries.  But yes, even vegans eat unhealthy foods.  During football season in particular, I'm no stranger to french fries, tortilla chips, guacamole, and white wine.  But on a day to day basis, I try to stay on track as much as possible.  

Sarah Velasco: What is the longest you have cleansed for?
Lindsay Reinsmith: The longest I've ever done a cleanse is 9 days, but honestly I feel the best on day 4.

Sarah Velasco: What are common misconceptions about cleanses?
Lindsay Reinsmith: Probably the biggest misconception is that all cleanses are starvation diets (or use harsh stimulants and laxatives to eliminate toxins).  You can get a great cleansing experience using whole fruits and vegetables, loaded with fiber.  Our bodies have amazing detox systems already built in (our livers and kidneys).  But our bodies were also never meant to process the kinds of diets so prevalent in this day and age.  You don't need a magic pill: simply adhering to a 100% natural diet all the time will "cleanse" you as you go.  For those of us non-perfect souls, a 3-6 day detox cleanse is a great way to get you back on track and jumpstart healthier habits.

Sarah Velasco: How do you see customers utilizing the cleanses? Once in a blue moon or once a month?
Lindsay Reinsmith: The vast majority of our customers use Kaeng Raeng 3-4 times per year.  We actually hope they don't have to use it once a month!  Our goal is for someone to come away from a Kaeng Raeng cleanse inspired and empowered to continue on a healthier path, to say "no" to toxic, chemical additives and "yes" to vegetables.  We want that lifestyle to last months, not days, until a customer feels the need to cleanse again.

Which is your best seller?

How often should I use Kaeng Raeng? 
Although each individual person's detox needs are different, we recommend conducting a three or six day detox once every quarter (4 times per year). How will you know? As soon as you start to feel fatigued, bloated, or generally gross on your current diet, you can always turn to a healthier lifestyle with Kaeng Raeng. As always, conduct your cleanse with plenty of water (at least 24 oz per serving in addition to the recommended 64 oz per day).
What are the flavors? Does an order come with all three flavors?
Each program comes with all three flavors: "into the blue" - blueberry, banana; "daybreak" - mango, peach, pineapple; "joyful" - strawberry, raspberry, pineapple. If you are allergic to any of these fruits, send a request for a customized order to info@kaengraeng.com.
One serving tasted different from another. Why is that?
Because Kaeng Raeng is made from fruit, it will taste the same way fresh fruit does. Just like one fresh strawberry won't taste exactly the same as another fresh strawberry, you will experience the same differences with Kaeng Raeng. Cleanse products that have fruit "flavoring" are not all natural and contain additives that contradict a healthy detox.
What is the difference between the three levels?
The main difference between the levels is the amount of fiber, in addition to some vitamins. If you already eat a fairly high fiber diet, you will get better results with our Veteran or Master level. If you eat a more conventional diet, you will see better results with the Beginner, as the Veteran or Master may cause more detox symptoms for you. None of our levels contain a laxative or stimulant and all are safe to use.
What dietary restrictions are addressed by KR?
You can have KR if you are vegan, are lactose intolerant, have a gluten allergy, are sensitive to stimulants like caffeine, have a soy allergy, or have a peanut allergy. KR is not recommended for diabetics, or women who are pregnant, plan on becoming pregnant soon, or breast feeding. Our original program contains soy.  Our soy free programs contain no soy.
Is this the same thing as a juice fast?
No. Juice fasts are liquid-only diets that involve a significant reduction in daily caloric intake, specifically deficient in protein and fiber. Kaeng Raeng is not a fast. Although many juice fasts and juice cleanses exist and may help you lose weight, KR is a nutritional cleanse that provides protein, daily vitamins, probiotics, and it's filling and easy to maintain. Many juice cleanses are simply sugar water fasts that may provide nutrients but are high in sugar and lack the fiber that makes fruit a whole food. Kaeng Raeng also encourages you to eat raw fruits and vegetables, so it is not a liquid only program.
Can I exercise on a cleanse?
Yes! In fact, regular stretching and low impact weight training is encouraged while using Kaeng Raeng. During a cleanse, your body uses calories more efficiently. You will have better energy with less sleep and fewer calories. Each person's exercise abilities are different - do not continue strenuous exercise on the cleanse if you begin to feel faint or light headed.
How much weight will I lose?
Every person varies and the amount of weight you can lose has a lot to do with how much you weigh before conducting your cleanse. We've had customers lose as much as 5 lbs in three days and 10 pounds in six days. Kaeng Raeng is not a long term weight loss solution.



Preparing for your Kaeng Raeng cleanse

Once you order your cleanse, Kaeng Raeng will send you an email to make your cleanse experience the best it can be! They encourage you sending them emails for any questions you have.

Before you cleanse
Kaeng Raeng suggests you ease into your cleanse 2-3 days before, cutting back on processed foods, sugar, and animal products. You may notice detox symptoms immediately depending on your every day eating habits. Caffeine and sugar withdrawal headaches are normal, especially if you have them every day!
Before you start your cleanse, stock up on fruits and vegetables. Non-dairy milk and 100% juices are also great but try to avoid anything with added sugar or salt. (People do Kaeng Raeng liquid only, but do what is best for you!) If you have coffee or tea regularly, try organic green tea in the morning to avoid caffeine withdrawal headaches.

During Your Cleanse
You can blend Kaeng Raeng powders into smoothies. Kaeng Raeng offers great recipes that you can check out here. Kaeng Raeng is low in sugar and will not taste very sweet. So, if you are used to having sweet beverages, you may find that adding a small amount of juice will provide enough sweetness without adding many calories. 
Kaeng Raeng suggests drinking your first shake slowly as consuming it too quickly can make you feel nauseous because it has a lot of nutrients.
Drink your last shake of the day at least 4 hours before you sleep.
Drink water while on the cleanse! (At least 64oz) to avoid dehydration and cramping.

Each person's bodies respond differently to the cleanse. As you cleanse, your body will release built up toxins in your system. For most people, there are little to no side effects. for others, you may experience slight nausea, headaches, cramping, and even a skin rash initially. These are good signs that the detox is working! Your body has to get a little worse before it can get better. 

After Your Cleanse
To transition out of the cleanse, it is best to post-cleanse properly to avoid stomach cramping. Reintroduce cooked vegetables, then grains, and nuts in the first two days. Then, meat and dairy last if those are in your regular diet. It is best to stay vegetarian at least 3 days after the cleanse has finished.

What we think:
