3-Day Sambazon Purifying Cleanse

The "Prepare" beverage is an acerola cherry, lemon, and cayenne blend that typically makes up the start of any cleanse program.
From a flavor perspective, it's great. This juice has a nice kick to it and combination of lemon and cayenne pepper is perfect. It is a perfect juice for the morning and lemon and cayenne kick start the liver to start the detoxifying process. The cherry and lemon flavors provide the base, and the cayenne gives it a kick! Sambazon has done a nice job with the formulation - clean and well-executed.
This afternoon juice is green and it tastes great! Made with USDA organic blend of kale, apple, cucumber, parsley, water, lemon and lime juices. Elimiate is the second juice in the Sambazon Purifying Cleanse. You can identify each of the listed fruits and vegetables, and the juice is palatable. The cucumber is a nice base for any vegetable juice, while kale is a great superfood that provides nutrients and enzymes for detoxifying the body. You will appreciate every sip! This juice tastes good, so whether you are cleansing or just want to drink juice this is a great choice. The design is appealing with the vibrant green accent color.

Recharge is amazing. It is like a melted chocolate ice cream or a delicious chocolate smoothie. Interview with Mary Waldner: Chairman & Founder of Mary's Gone Crackers

As founder of Mary’s Gone Crackers, Mary Waldner leads both product development and brand strategy for the company. Mary is responsible for the development of all of the company’s products, and has been a Director since the company was incorporated in 2004.
Inspired by her own struggles with Celiac Disease, Waldner created Mary’s Gone Crackers after finding a shortage of nutritious, gluten free options that tasted good. Her handcrafted recipe became a hit not only with Celiac sufferers, but with consumers eager for delicious snacks they could feel good about eating. Mary’s Gone Crackers Original was awarded the Sofi Gold for the most outstanding cracker at the New York Fancy Food Show in 2008.
Waldner is a member of the Organic Trade Association and the Celiac Sprue Association.
Prior to co-founding Mary’s Gone Crackers, Waldner practiced as a psychotherapist for 26 years; she holds a master’s degree in clinical psychology and is a licensed marriage and family therapist. Mary Waldner is married to Dale Rodrigues with whom she created Mary’s Gone Crackers. She resides in Paradise, CA.

Sarah Velasco: Can you tell us about yourself? How did you get started?
Mary Waldner: I grew up in suburban Chicago.  I have a BA and an MA in psychology, am a licensed marriage and family therapist.  I had a psychotherapy practice for 26 years in the Bay Area (northern California) prior to starting our company in 2004.  I was diagnosed with celiac disease in 1994 after having been ill for most of my life and not knowing why.  I knew it was related to food, but I didn’t even know what gluten was prior to then.  My son was diagnosed at the same time, he was 9.  So I began learning how to eat gluten free and baking my favorite things in gluten free versions.  My health was transformed very quickly and I was really happy.  The only hard part was going out to restaurants and going to parties.  There was no bread, or crackers or breadsticks to eat or dip or spread.  It was hard to sit and watch everyone eat and not be able to eat anything myself.  So I played with all these whole grains that I loved to eat and eventually, after much trial and error, came up with the recipe for the Original crackers.  I liked them a lot and made them for myself and brought them in little bags whenever I went to a party or out to dinner and was very satisfied.
Sarah Velasco: How did Mary’s Gone Crackers begin?
Mary Waldner: After many years of making the crackers by hand and watching others eat them and LOVE them, I knew that the response people were having was not a normal, everyday reaction to a cracker; that I had something much more special than that.  I also knew, given how labor intensive they were to make, that even if I gave everyone the recipe, or put it in a cookbook, no one would bother to make them because it was too much work.  So I woke up on New Year’s day, 1999, and said to my husband Dale, “I think we need to manufacture these crackers.”  And he agreed!  So for the next 5 years we worked on learning about the food industry, writing a business plan, finding investors, looking for someone to manufacture our crackers, translating my handmade recipe into a more automated process, and on and on.  We got it all together and in 2004 we opened our business!
Sarah Velasco: What is your vision behind the company?
Mary Waldner: Originally it was just about offering an organic, gluten free, whole food product that I knew everyone loved.  As we grew I quickly realized that people were starving for our message as well:  Conscious Eating; open, transparent practices; using whole, real, organic ingredients; real people making real food with honesty and love.  Those have always been my values, how I eat, so the vision behind the company is about offering food that is made the way I want food to be made, and it seems to be working really well!

Sarah Velasco: What is conscious eating?
Mary Waldner: Conscious Eating means being aware of what you are eating—what’s in your food, where it comes from, how it is made, knowing how and where the ingredients were grown.  And also how does eating certain foods make you feel?  Do you think what you’re putting into your body is truly nourishing?  I know that eating whole, real, nourishing food can transform your life, can put you on a path of health and well being.  I want everyone to be their best, most vital self and no one can achieve that while eating garbage.
Sarah Velasco: Can you tell us how you incorporate conscious eating into your products?
Mary Waldner: By not compromising on our ingredients—organic, gluten free, ethically produced ingredients is the foundation for all our products.  No GMO ingredients, no highly processed products.  Our food is made the way you would make something in your own kitchen, only on a bigger scale.
Sarah Velasco: Are your products gluten free, nut free, sugar free or soy free?
Mary Waldner: All of our products are gluten free, vegan/dairy and egg free, and peanut and tree nut free (except coconuts.)  We use soy in the form of fermented tamari in many of our crackers and pretzels (there are a few that are free of soy), and we use sweeteners in our Love Cookies—but the only cane sugar is in our chocolate chips.  Otherwise we use coconut palm sugar, tapioca syrup, some molasses. 

Sarah Velasco: What types of products do you have?
Mary Waldner: We have 7 flavors of our seed crackers:  Original, Herb, Black Pepper, Onion, Caraway and our two newest flavors, Hot ‘n Spicy Jalapeno and Super Seed.  We have 4 flavors of whole grain and seed Pretzels:  Sea Salt, Chipotle Tomato, Curry, and our newest addition, the Everything Pretzel.  We have 4 flavors of our Love Cookies:  Chocolate Chip, Double Chocolate, Ginger Snaps and “N’Oatmeal” Raisin (no oats!)  We are just now launching our fabulous Graham Crackers in two flavors:  Classic and Chocolate.
Sarah Velasco: Are there any common misconceptions people may have?

Interview with ChocoSol

Sarah Velasco: Can you tell readers about ChocoSol? How did it start?
ChocoSol: At ChocoSol, we take the ‘food of the gods’ - cacao - and turn it into fresh, stone ground artisanal chocolate. Our chocolate is made from organically grown, horizontally traded cacao that we source directly from Southern Mexico. All of our chocolate is free from dairy, gluten, soy, nuts, and is vegan to boot. You won’t find any GMOS, additives, or preservatives, either!

At the end of 2014, we’ll be celebrating our 10th anniversary. It all started when ChocoSol’s Founder, Michael Sacco, brought back organically grown, forest garden cacao from Mexico to grind chocolate on his front porch and sell at farmers’ markets in Toronto.

In 2002, Michael drove down to Mexico with a solar concentrator as part of his Master’s in environmental studies program. He was energized by the community and conviviality in Mexico and was first introduced to chocolate making informally by an elder who asked him to make traditional drinking chocolate with her.

He had an ‘aha’ realization that chocolate could be channeled as a vehicle to fund future environmental projects and research, instead of depending on government grants. And the seed was planted!

Sarah Velasco: What is ChocoSol?
ChocoSol: ChocoSol is a social enterprise/learning community. We’re more than just a business. Each ChocoSolista (what we call ChocoSol staff) comes to ChocoSol with that passion and expertise that fuels them and their work, and that also strengthens and re-invigorates the work that we do. For us cacao and chocolate are symbolic products that represent the values we carry with us. We don’t draw a line between our “work lives” and “our personal lives” in the sense that what we do at ChocoSol is an extension of the community and values that we engage in outside of “work”.

ChocoSol’s name also has layers to it. In Spanish, ‘sol’ means ‘sun’ and is a direct reference to the first 1,000 kilograms of cacao that were roasted with solar power. In French, ‘sol’ means ‘soil’, which draws us back to the earth and the importance of the soil ecology that grows our food. And in English, ‘sol’ sounds like ‘soul’ and is a reminder to do things with good spirit and integrity.

Sarah Velasco: What is ChocoSoil? What is that process?
ChocoSol: The ChocoSoil Project is an urban agriculture project that takes a cradle-to-cradle approach to waste management. Basically, it integrates soil making into the day-to-day operations at ChocoSol and reflects our work towards producing healthy urban soil ecosystems and rooftop grown spices for chocolate making on site at our location in Toronto.

Sarah Velasco: How is it ChocoSol different from regular chocolate?
ChocoSol: At ChocoSol we make Mexican-style stone ground chocolate at an artisan scale. Our chocolate is literally made from cacao beans and is commonly known as bean-to-bar chocolate. We use low heat and low shear to preserve the healthful and nutritional components of the cacao.

We work directly with the farmers who grow the cacao beans and pay them above fair trade prices. Child slavery is a very serious, real, and prominent component of the chocolate industry and we don’t source cacao from regions where this occurs (i.e. Africa). Check out the Food Empowerment’s Chocolate List as a resource and starting point.

We also avoid preservatives (most chocolate contains soy lecithin) and use fair trade and organic sugars. And ChocoSol chocolate is free of major allergens, including gluten, soy, dairy, and nuts.

Sarah Velasco: Why vegan chocolate?
ChocoSol: ChocoSol chocolate is an open invitation to all. Unless you are allergic to cacao, we’ve got you covered. This includes making chocolate that is free from dairy and other animal products.

Sarah Velasco: What is your best seller?
ChocoSol: Our eating chocolate is definitely our best seller and the most popular flavour is Sinfully Raw Vanilla. It’s an 82% chocolate made with roasted cacao and it’s name is inspired by the whole bean vanilla we use and the raw cacao nibs that are sprinkled on the back.

Our coffee is also becoming more and more popular. We bring in green coffee (horizontally traded and organically grown) from Southern Mexico and have it roasted fresh weekly by a local eco-roaster.

Sarah Velasco: Are there any common misconceptions when it comes to whole food, stone ground chocolate?
ChocoSol: From time to time, we have people express surprise that our chocolate doesn’t have the exact mouth feel of Swiss-style chocolate but once we explain that our chocolate is made in the Mexican style and is stone ground things are good.

When is comes to cacao itself, many people are surprised to learn that you can eat cacao beans as is - including the shell.

Sarah Velasco: Where can readers find ChocoSol?
ChocoSol: Our kitchen location is now open 7 days a week and we’re at farmers’ markets throughout Toronto (we even have some year-round markets). Health food and retail stores/co-ops also carry our products. And we’re always doing special events (like our Artisanal Chocolate Workshops) and festivals (like the Mariposa Folk Festival and the Hillside Community Festival).

A Swiss-trained chef, David has had a 30-year career in the hotel and hospitality industry. Opening GM of Boulder’s St. JulienHotel, David has broad experience in creating high-touch hospitality and food businesses. When he is not in the kitchen, at home, or in the Sjaak’s factory concocting another mouth watering treat, he is either gardening (a landscape worthy of a wedding location), painting, or playing with his grandson, trying to teach him to say OPA (Dutch for grandpa)"

What does Sjaaks mean? 
Sjaak's is an alternate spelling of Jacques, which is the owners name.

What is your mission? 
To create delicious organic chocolates!

What type of products do you have? 
A large variety of organic chocolates including chocolate bars, candy bars, gift boxes and extensive holiday selections.

Can you tell us about your vegan products? 
All of our products are vegan. 

Are there common misconceptions about vegan chocolate? 
People often think vegan chocolates will taste much different, but any good dark chocolate is vegan and the recipes Jacques creates are amazing!

What makes your products different from other ones on the market? 
We are a small family owned and operated business.
